10 servings

10
  • 3 cups all-purpose flour
  • 3 cups whole milk
  • 3 cups granulated sugar
  • 3 large eggs
  • 2 tablespoons melted margarine or unsalted butter
  • Juice of 1 lemon
  • A pinch of salt
  • Butter and flour for greasing the pan

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). Grease and flour a 9×13-inch baking pan or a 10-inch round cake pan.

  2. 2

Add the eggs, sugar, melted margarine and lemon juice to a blender. Blend on medium speed for about 30 seconds.

  3. 3

Gradually add the milk and flour in alternating batches, blending briefly between each addition, until the batter is completely smooth and lump-free.

  4. 4

Add a pinch of salt and blend for another 10 seconds to combine evenly.

  5. 5

Pour the batter into the prepared pan and bake for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted in the centre comes out clean.

  6. 6

Let the cake cool in the pan for 10 minutes before turning out. Finish with a dusting of powdered sugar before serving.

💡 Chef's Tip

For extra citrus punch, stir in the finely grated lemon zest along with the juice. The cake also freezes beautifully — wrap individual slices and freeze for up to one month.
