Flourless Banana & Oat Cake

A naturally sweet, moist cake made with just a handful of wholesome ingredients and no added sugar. Ripe bananas do all the sweetening work while oats provide a hearty texture. Ready in under an hour, it makes a perfect healthy snack or breakfast treat.

🛒 Ingredients

  • 4 eggs
  • 200 g (2 cups) rolled oats
  • 2 tablespoons melted butter
  • 4 ripe bananas
  • 100 g (½ cup) raisins
  • 1 tablespoon baking powder

Directions

    Preheat your oven to 200 °C (390 °F) and grease a 22 cm round cake tin or a loaf pan.

    Peel the bananas and place them in a blender along with the eggs, rolled oats, melted butter, and baking powder.

    Blend on high for about 1–2 minutes until the batter is completely smooth.

    Stir in the raisins by hand using a spatula so they are evenly distributed throughout the batter.

    Pour the batter into the prepared tin and bake for 40 minutes, or until a skewer inserted in the centre comes out clean.

    Allow to cool for 10 minutes before unmoulding. Serve warm or at room temperature.

💡 Chef's Tip

The riper the bananas, the sweeter and more flavourful the cake. Overripe bananas with black spots work best. Swap raisins for dark chocolate chips or chopped walnuts for a different twist.
