🛒 Ingredients

10 servings

10
  • 4 large eggs
  • 1 cup packed brown sugar
  • 100 g unsalted margarine, softened
  • 1 cup rolled oats
  • 1½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 apples, peeled and diced
  • 3 ripe bananas, sliced into rounds
  • Crumble topping: ½ cup flour, ½ cup brown sugar, ½ tablespoon margarine, cinnamon to taste

Directions

  1. 1

Preheat the oven to 180 °C (350 °F). Grease and flour a rectangular baking pan.

  2. 2

In a large bowl, beat together the eggs, brown sugar, and softened margarine until smooth and slightly fluffy.

  3. 3

Fold in the rolled oats and flour with a spatula, mixing gently until just combined.

  4. 4

Stir in the baking powder, then add the diced apples and banana slices. Fold carefully to distribute the fruit evenly throughout the batter.

  5. 5

Pour the batter into the prepared pan and spread it evenly with a spatula.

  6. 6

Make the crumble topping: rub together the flour, brown sugar, margarine, and cinnamon with your fingertips until crumbly. Sprinkle generously over the batter.

  7. 7

Bake for 20 to 25 minutes, or until a skewer inserted in the center comes out clean. Allow to cool before slicing and serving.

💡 Chef's Tip

The riper the bananas, the sweeter and more moist the cake will be. For a crunchier topping, add a handful of chopped walnuts or pecans to the crumble mixture.
