A wonderfully moist and citrusy cake made entirely in a blender — no electric mixer required. A warm orange syrup poured over the freshly baked cake soaks in deeply, making every slice soft, fragrant, and utterly delicious.

🛒 Ingredients

10 servings

10
  • 3 eggs
  • Juice of 2 oranges (about ⅔ cup / 150 ml)
  • ¾ cup (180 ml) sunflower oil
  • 1¾ cups (350 g) granulated sugar
  • 3 cups (380 g) all-purpose flour
  • 1 tablespoon (11 g) baking powder
  • Juice of 1 extra orange (for the syrup)
  • 3 tablespoons sugar (for the syrup)

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). Add the eggs, juice of 2 oranges, oil, and sugar to a blender. Blend for about 1 minute until smooth and fully combined.

  2. 2

Pour the mixture into a large mixing bowl. Gradually fold in the flour using a spatula, then gently stir in the baking powder last — do not overmix.

  3. 3

Grease and flour a 9-inch bundt or tube pan. Pour in the batter and bake for 35 minutes, or until a toothpick inserted in the center comes out clean.

  4. 4

While the cake is still warm, gently heat the reserved orange juice with 3 tablespoons of sugar until the sugar dissolves. Poke the warm cake all over with a fork, then pour the syrup slowly over the top so it absorbs completely before serving.

💡 Chef's Tip

Stir the grated zest of one orange into the batter for an extra punch of flavor. Stored in an airtight container at room temperature, the cake stays moist for up to 3 days.
