  • 200 g (7 oz) peeled and grated carrots
  • 3 large eggs
  • 100 g (7 tbsp) unsalted butter, melted
  • 300 g (1½ cups) granulated sugar
  • 250 g (2 cups) all-purpose flour, sifted
  • 1 packet baking powder (11 g / 2¼ tsp)

    Preheat your oven to 180 °C (350 °F). Grease and flour a bundt pan or a 22 cm (9-inch) round cake pan.

    In a blender, combine the grated carrots, sugar, eggs and melted butter. Blend until smooth and creamy.

    Pour the mixture into a large bowl, sift in the flour and baking powder, then fold gently with a spatula until a smooth, lump-free batter forms.

    Pour the batter into the prepared pan and bake for about 40 minutes, or until a toothpick inserted in the centre comes out clean.

    Allow to cool for 10 minutes in the pan before turning out onto a wire rack. Serve warm or at room temperature.
