5
  • 3 eggs
  • 3/4 cup (180 ml) neutral vegetable oil
  • 1 cup (200 g) granulated sugar
  • 3/4 cup (180 ml) whole milk
  • 2 1/2 cups (300 g) fine cornmeal or corn flour
  • 1 teaspoon baking powder

Directions

  1. 1

Preheat oven to 350 °F (180 °C). Grease a cake pan and dust with cornmeal.

  2. 2

Add eggs, sugar, and oil to the blender and blend on medium speed for 2 minutes until smooth and slightly frothy.

  3. 3

Add the cornmeal and milk and blend for 4 more minutes until the batter is completely smooth and lump-free.

  4. 4

Add the baking powder and blend for a final 1 minute.

  5. 5

Pour the batter into the prepared pan and bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

Remove from the oven, gently poke the surface with a fork, and let cool for 15 minutes before unmolding.

💡 Chef's Tip

Drizzle the warm cake with honey or dulce de leche for an indulgent finish. Swap whole milk for coconut milk for a tropical twist, or add a teaspoon of vanilla extract for extra depth of flavor.
