  • ½ cup (125 ml) whole milk
  • ½ cup (125 ml) neutral oil (sunflower or vegetable)
  • 3 large eggs
  • 1½ cups (300 g) granulated sugar
  • 2 level cups (250 g) all-purpose flour, sifted
  • 1 tablespoon baking powder
  • Butter and flour for the pan

Directions

    Preheat oven to 350 °F (180 °C). Grease and flour a 9-inch bundt or tube pan.

    Pour the milk, oil, eggs and sugar into a blender. Blend on medium speed for about 1 minute until smooth and slightly frothy.

    Add the sifted flour in three additions, blending briefly between each just until incorporated.

    Pour the batter into a large bowl. Sprinkle in the baking powder and fold gently with a spatula using light, sweeping motions.

    For an even fluffier result, pour the batter back into the blender for 5 seconds after adding the baking powder — this helps the cake rise beautifully.

    Pour batter into the prepared pan and bake for 40 minutes, until golden brown on top and a toothpick inserted in the center comes out clean.

    Cool in the pan for 10 minutes before turning out onto a wire rack.
