🛒 Ingredients

10 servings

  • 3 eggs
  • 1 cup fresh passion fruit juice
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • Pulp of 2 passion fruits (with seeds)
  • 1 cup sugar (for the syrup)

Directions

  1. 1

Preheat your oven to 350 °F (180 °C) and grease a 9-inch round cake pan.

  2. 2

Add the eggs, passion fruit juice, and oil to a blender. Blend for about 3 minutes until light and frothy.

  3. 3

In a large bowl, whisk together the flour, sugar, and baking powder.

  4. 4

Pour the blender mixture into the dry ingredients and stir gently with a spatula until you get a smooth, lump-free batter.

  5. 5

Pour the batter into the prepared pan and bake for 30 to 35 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.

  6. 6

While the cake bakes, make the syrup: combine the pulp of 2 passion fruits with the sugar in a small saucepan over medium heat, stirring occasionally, until it reaches a light syrupy consistency.

  7. 7

As soon as the cake comes out of the oven, pour the warm syrup over the top while still hot and let it soak in before slicing.

💡 Chef's Tip

Add a squeeze of lime juice to the syrup for extra brightness. Swap vegetable oil for melted butter for a richer crumb. Store covered at room temperature for up to 3 days.
