🛒 Ingredients

6 servings

6
  • 4 very ripe bananas
  • 1 cup oat flour (or blended rolled oats)
  • 2 eggs
  • 3 tablespoons skimmed milk
  • 1 tablespoon unsweetened cocoa powder (50% cacao)
  • 1 tablespoon baking powder
  • 1/2 cup raisins (optional)
  • Ground cinnamon to taste

Directions

  1. 1

In a large bowl, mash the ripe bananas thoroughly with a fork until you obtain a smooth, lump-free purée.

  2. 2

Add the eggs and skimmed milk, then mix vigorously until fully combined.

  3. 3

Gradually fold in the sifted oat flour and cocoa powder with a spatula, stirring until the batter is smooth and uniform.

  4. 4

Stir in the raisins and cinnamon to taste.

  5. 5

Add the baking powder last and mix only until just incorporated — do not over-mix.

  6. 6

Pour the batter into a silicone mould (no greasing needed) and place it in the air fryer basket.

  7. 7

Cook at 160 °C (320 °F) for 25 to 30 minutes. Test doneness with a toothpick inserted in the centre — it should come out clean.

  8. 8

Allow the cake to cool completely at room temperature before unmoulding to keep its moist texture.

💡 Chef's Tip

For an extra indulgent finish, melt a few squares of 70% dark chocolate and drizzle over the cooled cake. You can also swap the raisins for chopped walnuts or dark chocolate chips for added crunch.
