20 servings

  • 2 large eggs
  • 2 tbsp softened unsalted butter
  • 1 cup (200 g) granulated sugar
  • 2 cups (250 g) all-purpose flour
  • ¾ cup (200 ml) whole milk
  • 2¼ tsp baking powder
  • 1 tsp vanilla extract
  • Butter and flour to grease the pan

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). Grease a 10-inch (26 cm) round cake pan with butter and dust it lightly with flour.

  2. 2

Add the eggs, sugar, and softened butter to a blender and blend until smooth and creamy.

  3. 3

With the blender running on medium speed, slowly add half of the flour.

  4. 4

Pour in the milk in a steady stream, then add the remaining flour and blend until the batter is completely smooth.

  5. 5

Add the vanilla extract and blend for a few more seconds.

  6. 6

Turn off the blender and gently fold in the baking powder with a spatula, using light upward strokes.

  7. 7

Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

  8. 8

Cool in the pan for 10 minutes, then turn out onto a wire rack to finish cooling.

💡 Chef's Tip

Stir in the zest of one lemon or orange for extra fragrance. Dust with powdered sugar just before serving for a simple, elegant finish.
