  • 500 g cassava, peeled
  • 500 g freshly grated coconut
  • 3 eggs
  • 3 tablespoons unsalted butter, softened
  • 1 cup (200 g) sugar
  • 2 teaspoons baking powder

Directions

    Peel the cassava, remove the central fibrous core, and cut into large chunks.

    Place the eggs, softened butter, and cassava chunks in a blender. Process until you get a smooth, thick batter.

    Pour the batter into a large bowl. Stir in the grated coconut, sugar, and baking powder until fully combined.

    Preheat the oven to 350 °F (180 °C). Grease and flour a round cake pan, then pour in the batter.
