🛒 Ingredients

10 servings

10
  • 2 cups (400 g) sugar
  • 4 eggs
  • 3 tablespoons (45 g) softened butter
  • 3 cups (375 g) all-purpose flour
  • 1 cup (250 ml) milk
  • 1 tablespoon baking powder
  • 3.5 oz (100 g) shredded coconut
  • 1 cup (250 ml) milk (for syrup)
  • 1 cup (200 g) sugar (for syrup)
  • 1 teaspoon butter (for syrup)
  • Whole cloves to taste

Directions

  1. 1

Preheat oven to 350 °F (180 °C). Grease and flour a cake pan.

  2. 2

Beat sugar, butter, and eggs with an electric mixer until light and creamy.

  3. 3

Add flour and milk alternately, mixing at medium speed until you get a smooth, lump-free batter.

  4. 4

Fold in baking powder gently with a spatula.

  5. 5

Pour batter into the prepared pan and bake 35–40 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

While the cake bakes, make the syrup: combine milk, sugar, butter, and cloves in a saucepan. Bring to a gentle boil and simmer 5 minutes.

  7. 7

Stir in shredded coconut and cook over low heat for another 5 minutes, stirring occasionally.

  8. 8

Remove cake from oven, poke the surface all over with a fork, and pour the warm coconut syrup generously on top. Serve warm or at room temperature.

💡 Chef's Tip

Always pour the syrup while the cake is still hot straight from the oven — it absorbs much better that way. Swap cloves for a cinnamon stick or a splash of vanilla extract for a different twist.
