🛒 Ingredients

12 servings

12
  • 2 apples (any variety)
  • 3 eggs
  • ⅓ cup demerara or raw cane sugar
  • 3 tablespoons neutral oil (sunflower or light olive oil)
  • 1 tablespoon ground cinnamon
  • 1 pinch of salt
  • 1½ cups oat flour (blend rolled oats if needed)
  • 1 tablespoon baking powder

Directions

  1. 1

Wash and dice the apples into small cubes — peeling is optional.

  2. 2

Add the apple cubes, eggs, sugar, oil, cinnamon and salt to a blender. Blend until completely smooth.

  3. 3

Pour in the oat flour and blend again until a uniform batter forms.

  4. 4

Add the baking powder and fold it in gently with a spatula — do not over-mix.

  5. 5

Pour the batter into a greased and oat-flour-dusted cake tin.

  6. 6

Oven method: bake at 350 °F (180 °C) for about 30 minutes. Air fryer method: preheat to 350 °F (180 °C) and cook for 20–25 minutes.

  7. 7

Test doneness by inserting a toothpick into the centre — it should come out clean.

  8. 8

Allow to cool completely before unmoulding. Finish with a dusting of cinnamon and serve.

💡 Chef's Tip

Use very ripe apples for a naturally sweeter, softer cake. Swap the sugar for maple syrup if preferred. The cake keeps well wrapped at room temperature for up to 3 days, or refrigerated for 5 days.
