🛒 Ingredients

15 servings

  • 3 eggs
  • 3 cups (375 g) all-purpose flour
  • 2 cups (400 g) granulated sugar
  • 1 cup (240 ml) neutral oil (sunflower or vegetable)
  • 2 packets (3 oz each) fruity gelatin powder (pineapple, orange, or lemon)
  • 1 cup (240 ml) boiling water to dissolve the gelatin
  • 1 tablespoon baking powder

Directions

  1. 1

    Preheat your oven to 350 °F (180 °C) and grease a 9×13-inch baking pan.

  2. 2

In a large bowl, whisk together the flour, sugar, and baking powder until well combined.

  3. 3

In a separate bowl, pour boiling water over the gelatin packets and stir until fully dissolved. Let it cool for 5 minutes.

  4. 4

Add the oil and eggs to the cooled gelatin mixture and beat until smooth and slightly frothy.

  5. 5

Gently fold the wet ingredients into the dry ingredients, stirring just until combined — do not overmix to keep the cake fluffy.

  6. 6

Pour the batter into the prepared pan and bake for 30 minutes, or until golden and a toothpick inserted in the center comes out clean.

  7. 7

Cool in the pan for 10 minutes, then unmold and serve at room temperature.

💡 Chef's Tip

Try lemon or orange gelatin for a bright, citrusy flavor that's especially refreshing in summer. Dust with powdered sugar or drizzle with a simple glaze in a matching color for a festive touch.
