Creamy Gelatin Dessert with Table Cream

This is the dessert that rescues a busy afternoon: three ingredients, one blender, and two hours of patience in the fridge. Flavored gelatin meets cold cream for a silky set somewhere between a flan and a mousse. At home it's the recipe for improvised Sunday lunches — the kids ask for it before it has even set.

🛒 Ingredients

5 servings

5
  • 1 packet flavored gelatin (any flavor, such as Dr. Oetker)
  • 500 ml (2 cups) simmering water
  • 2 tablespoons sugar
  • 1 can (300 g / 10 oz) table cream, or heavy whipping cream
  • Fresh fruit, chocolate shavings or mint, to decorate

Directions

  1. 1

Pour the gelatin powder and the sugar into the simmering water and stir until fully dissolved, about 1 minute.

  2. 2

Transfer the mixture to a blender, add the cream and blend for about 3 minutes, until smooth and slightly frothy.

  3. 3

Divide straight away into glasses or small bowls, before the mixture cools down.

  4. 4

Refrigerate for at least 2 hours, until firmly set, then decorate at the last moment and serve well chilled.

💡 Chef's Tip

The trick is to blend the gelatin mixture while it is still hot: it combines with the cold cream without clumping and traps a little air, which makes the set lighter. For a leaner version, swap the table cream for Greek yogurt. To unmold it, dip the ramekin briefly in warm water.
