🛒 Ingredients

10 servings

10
  • 4 eggs (whites and yolks separated)
  • 1 cup (200 g) granulated sugar
  • ½ cup (120 ml) whole milk
  • 2 tablespoons (30 g) margarine
  • 1½ cups (180 g) all-purpose flour, sifted
  • 1 teaspoon baking powder

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). Grease and flour a round cake pan thoroughly.

  2. 2

Beat the egg whites with an electric mixer until stiff, glossy peaks form.

  3. 3

With the mixer running, add the egg yolks one at a time, then gradually incorporate the sugar.

  4. 4

In a small saucepan, heat the milk and margarine over medium heat until it just begins to simmer. Pour into the batter in a thin stream, alternating with the sifted flour, mixing gently.

  5. 5

Stop the mixer and fold in the baking powder with a spatula until just combined.

  6. 6

Pour the batter into the prepared pan and bake for 20 minutes, or until golden and a skewer inserted in the center comes out clean.

  7. 7

Allow the cake to cool completely before slicing and filling as desired.

💡 Chef's Tip

Sift the flour twice for the fluffiest crumb. Make sure the cake is fully cooled before cutting — it will hold its shape better and absorb more of your filling.
