🛒 Ingredients

4 servings

4
  • 10 tablespoons full-fat powdered milk
  • 5 tablespoons granulated sugar
  • 7 oz (200 g) unsalted butter, diced and softened
  • ¾ cup (200 ml) heavy whipping cream, very cold
  • 7 oz (200 g) sweetened condensed milk (about half a can)
  • 1 egg yolk, strained through a fine sieve
  • A few drops of pure vanilla extract

Directions

  1. 1

Remove the butter from the fridge 15 minutes ahead and cut it into small cubes so it softens evenly without becoming too warm.

  2. 2

Place all ingredients — powdered milk, sugar, softened butter, cold heavy cream, condensed milk, strained egg yolk, and vanilla extract — into a large mixing bowl or stand mixer bowl.

  3. 3

Beat on high speed for 15 minutes until the mixture becomes light, smooth, and creamy with a spreadable consistency.

  4. 4

Transfer the frosting to an airtight container and refrigerate for at least 2 hours to firm up and develop flavor.

  5. 5

Remove from the fridge and use immediately to frost or decorate your cake with a palette knife or piping bag.

💡 Chef's Tip

Keep your heavy cream as cold as possible for a fluffier result — even chill your mixing bowl in the freezer for 10 minutes beforehand. This frosting keeps well in the fridge for up to 3 days. It also works great as a filling between cake layers.
