🛒 Ingredients

1 servings

1
  • 2 large egg whites, room temperature
  • 1/2 cup (60 g) powdered sugar, sifted
  • 1 pinch of fine salt
  • a few drops of fresh lemon juice
  • gel food coloring (optional)

Directions

  1. 1

Make sure your bowl and beaters are completely clean and grease-free — even a trace of fat will prevent the whites from whipping properly.

  2. 2

Add the salt to the egg whites and beat on medium speed until soft, opaque peaks form.

  3. 3

Gradually add the sifted powdered sugar in three additions, beating well after each.

  4. 4

Add a few drops of lemon juice to stabilize, then fold in gel food coloring if desired.

  5. 5

Spread over your cooled cake with an offset spatula and refrigerate until ready to serve.

💡 Chef's Tip

Use gel food coloring rather than liquid for vivid color without thinning the frosting. Best consumed within 24 hours.
