🛒 Ingredients

2 servings

2
  • 6 egg whites, at room temperature
  • 500 g (4 cups) powdered sugar, sifted
  • Juice of 1 fresh lemon
  • 3 drops pure vanilla extract
  • Gel food coloring (optional)

Directions

  1. 1

In a perfectly clean and grease-free bowl, beat the egg whites with an electric mixer until stiff, glossy peaks form.

  2. 2

Gradually add the sifted powdered sugar in a thin, steady stream while continuing to beat at medium speed to keep a smooth texture.

  3. 3

Add the freshly squeezed lemon juice and vanilla extract, then beat for an additional 2 minutes until the icing is completely smooth and glossy.

  4. 4

If desired, divide the icing into separate bowls and tint each portion with a few drops of gel food coloring for a festive, multicolored effect.

  5. 5

Use immediately to frost your cakes, spreading evenly with an offset spatula. This recipe covers 2 large cakes.

💡 Chef's Tip

Make sure your bowl and beaters are completely clean and fat-free — any trace of grease or egg yolk will prevent the whites from whipping properly. For a thicker icing, add more powdered sugar one tablespoon at a time. Keep covered with a damp cloth between uses to prevent drying out.
