🛒 Ingredients

900 servings

900
  • 360 g (3 heaping cups) powdered whole milk
  • 240 g (2 heaping cups) sweetened cocoa powder
  • 480 ml (2 cups) whole milk
  • 3 tablespoons granulated sugar
  • 1 generous tablespoon unsalted butter

Directions

  1. 1

Combine all ingredients in a medium saucepan and stir until fully incorporated.

  2. 2

Cook over medium heat, stirring continuously, until the mixture thickens slightly.

  3. 3

Remove from heat as soon as the glaze starts to pull away from the sides of the pan.

  4. 4

Pour immediately over the cake while the glaze is still hot to achieve the signature volcano lava effect.

💡 Chef's Tip

Keep the glaze pourable — it firms up as it cools. If it thickens too much before you pour, stir in a splash of warm milk to loosen it.
