Peel and thinly slice the onions into regular half-moons. In a skillet over low heat, warm the olive oil and butter. Add the onions with a pinch of salt and sauté, stirring regularly, for 20 to 25 minutes, until they are perfectly tender, translucent, and lightly colored. Add the balsamic vinegar at the end of cooking if desired, and let it evaporate for 1 minute.

On the parchment paper, generously drizzle streams of honey to cover an area the size of your puff pastry. Sprinkle the thyme leaves and stripped rosemary directly over the honey.
