Irish Boxty - Full Breakfast
Fluffy and crispy potato pancakes topped with grilled bacon, fresh eggs, and melted tomatoes. A delicious Irish classic for a hearty and comforting breakfast.

- 4 medium potatoes
- 1 bunch green onions
- 100g all-purpose flour
- 1 egg white
- 150ml milk
- 1 tsp baking soda
- 3 tbsp butter
- 2 tbsp vegetable oil
- 6 cherry tomatoes
- 12 slices bacon
- 6 eggs

Preheat oven to very low temperature. Peel and grate 2 potatoes, then squeeze out excess moisture with a clean cloth. Cut the other 2 potatoes into large pieces and cook them for 10-15 min in boiling water.

Mash the cooked potatoes and mix with the grated potatoes, green onions, and flour.

Beat the egg white until soft peaks form. Incorporate the milk and baking soda, then gently fold everything into the potato mixture.

Heat a non-stick pan with 1 tbsp butter and a little oil. Drop 3-4 spoonfuls of the mixture and cook for 3-5 min per side until golden brown. Keep warm in the oven.

Grill the bacon slices and set aside. In a pan, melt butter with a little oil, add the cherry tomatoes and cook for 5 min. Cook the 6 eggs according to your preference.

Stack the boxty with bacon and eggs, serve with the melted tomatoes on the side.
💡 Chef's Tip
The boxty mixture can be prepared the day before and refrigerated. The pancakes can also be cooked in advance and reheated for 20 min in a low oven on absorbent paper.
