Jamaican Oxtail with Butter Beans

- 16 oz oxtail
- 1 onion, chopped
- 1 green onion
- 2 cloves garlic, minced
- 1 tsp ginger
- 1 Scotch Bonnet pepper, chopped
- 2 tbsp soy sauce
- 1 sprig fresh thyme, chopped
- 2 tbsp vegetable oil
- 1 1/2 cups water
- 7 oz butter beans
- 1 tbsp cornstarch
- 2 tbsp water
- Salt and pepper to taste

In a large bowl, mix the oxtail with the onion, green onion, garlic, ginger, pepper, soy sauce, thyme, salt, and pepper.

Heat the vegetable oil in a large skillet over medium-high heat. Brown the oxtail on all sides, about 10 minutes.

Transfer the meat to a pressure cooker and pour in 1 1/2 cups of water. Close the pressure cooker and cook under pressure for 25 minutes.

Remove from heat and open the pressure cooker according to the manufacturer's instructions.

Add the butter beans and bring to a simmer over medium-high heat.

Dilute the cornstarch in 2 tbsp of water, then stir into the mixture.

Cook and stir for a few minutes until the sauce thickens and the beans are tender.

Use a pressure cooker to tenderize the meat more quickly. This recipe is excellent the next day, after a night in the refrigerator. Ensure the butter beans are fully tender before serving.
