Directions

  1. 1

Prepare the vegetables: cut the zucchini, bell pepper, carrot, and eggplant into cubes or sticks.

  2. 2

Season the vegetables with salt, pepper, and a drizzle of olive oil, then grill them on a grill pan or bake in the oven at 392°F (200°C) for 20-25 minutes.

  3. 3

Meanwhile, mince the garlic and mix it with the Herbes de Provence.

  4. 4

Place the cod fillets in an oven-safe dish or skillet, sprinkle with the garlic-herb mixture, and season with salt and pepper.

  5. 5

Drizzle with lemon juice and olive oil.

  6. 6

Bake in the oven at 356°F (180°C) for 12-15 minutes or pan-sear in a skillet over medium heat for 8-10 minutes until the fish is opaque.

  7. 7

Serve the fillet hot, accompanied by the grilled vegetables.

💡 Chef's Tip

Do not overcook the fish to preserve its moisture. Fresh lemon is essential to enhance the flavor. You can add 1/2 cup of white wine for more flavor.
