Lemongrass Beef Stew with Noodles

- 2 cloves garlic, minced
- 3 stalks lemongrass
- 2 tablespoons fresh cilantro leaves
- 2 red chilies, sliced
- 2 tablespoons vegetable oil
- 9 oz beef stew meat
- 2 tablespoons soy sauce
- 1 teaspoon five-spice powder
- 1 teaspoon brown sugar
- 1 3/4 cups beef broth
- 3.5 oz rice noodles
- Lime, for serving

Place the ginger, garlic, lemongrass, cilantro, and 1 chili in a food processor. Process until a smooth paste forms.

Heat the vegetable oil in a large skillet over low heat. Add the paste and cook for 5 minutes, stirring regularly.

Stir in the beef, soy sauce, five-spice powder, brown sugar, and broth. Mix well.

Cover the skillet and bring to a boil. Reduce heat and simmer gently for 1 hour and 15 minutes, covered.

Remove the lid and cook for an additional 15 minutes until the beef is very tender.

Meanwhile, prepare the rice noodles according to package directions. Drain well.

You can prepare the paste in advance and store it in the refrigerator. For a more flavorful stew, use homemade broth. Adjust the amount of chili to your taste.
