🛒 Ingredients

6 servings

6
  • 1 pork loin, about 1.5 kg (3.3 lb)
  • Smoked bacon strips
  • Smoked sausage strips
  • Carrot strips
  • 3 garlic cloves
  • Salt to taste
  • Juice of 1 lemon
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 cup water (200 ml)

Directions

  1. 1

Using a thin sharp knife, pierce the pork loin all over and stuff each hole with strips of smoked bacon, sausage, and carrot.

  2. 2

Crush the garlic with salt into a paste and rub it thoroughly over the entire surface of the loin. Drizzle with lemon juice, cover, and refrigerate for at least 2 hours or overnight for best results.

  3. 3

Heat the oil in a pressure cooker over high heat and brown the stuffed loin on all sides until deeply golden.

  4. 4

Add the chopped onion and sauté for 2–3 more minutes. Pour in the water and reserved marinade. Seal the pressure cooker and cook under pressure for 25 minutes.

  5. 5

Allow the pressure to release naturally before opening. If the cooking liquid is too thin, reduce it uncovered over high heat until slightly thickened.

  6. 6

Slice the pork loin, spoon the sauce over the top, and serve immediately.

💡 Chef's Tip

Serve alongside crispy fried potatoes or roasted vegetables. Marinating overnight intensifies the flavor significantly — plan ahead if you can.
