Directions
- 1
Make sure your mixing bowl and whisk attachments are completely clean and grease-free — any fat residue will prevent the egg whites from whipping properly. Beat the egg whites on medium speed until they form a white, opaque foam.
- 2
Without stopping the mixer, gradually add the caster sugar one spoonful at a time. Pour in the lemon juice and, if using, a few drops of gel food colouring. Increase the speed to high and beat until the meringue is firm, glossy, and smooth, forming stiff, straight peaks when the whisk is lifted.
- 3
Refrigerate the meringue for about 30 minutes to allow it to set slightly. It is then ready to be piped or spread over your cakes and pies. This quantity is enough to generously cover a 24 cm (9.5 in) round cake.
💡 Chef's Tip
For extra stability, swap caster sugar for sifted icing sugar. To achieve a beautiful toasted finish, use a kitchen torch or place the decorated cake briefly under the broiler — the caramelised tips look stunning.
