30 servings

30
  • 4 eggs
  • 4 cups (480 g) all-purpose flour
  • 1 cup (100 g) 100% cocoa powder
  • 3 cups (720 ml) whole milk
  • 1½ cups (360 ml) vegetable oil
  • 3 cups (600 g) granulated sugar
  • 1½ tbsp (15 g) baking powder

Directions

  1. 1

Preheat your oven to 180 °C (350 °F), turning it on at least 10 minutes before baking.

  2. 2

Using an electric mixer on high speed, beat the eggs until pale, light and foamy.

  3. 3

With the mixer running, pour in the oil in a steady stream and mix until fully combined.

  4. 4

Gradually add the flour, milk, cocoa powder and sugar, alternating additions and mixing on medium speed until the batter is completely smooth.

  5. 5

Remove the bowl from the mixer and gently fold in the baking powder with a spatula — do not overmix at this stage.

  6. 6

Pour the batter into a large greased and floured baking pan.

  7. 7

Bake for 30–40 minutes. Test doneness by inserting a toothpick into the centre; it should come out clean.

💡 Chef's Tip

Allow the cake to cool completely on a wire rack before slicing to keep the crumb tender. A pinch of fine salt in the batter will amplify the cocoa flavour.
