  • 3 1/2 oz melted butter
  • 3 eggs
  • 1 3/4 oz pistachio paste (or finely ground pistachios)
  • 2 tsp baking powder

  • Whole pistachios for decoration
  • Confectioners' sugar for finishing (optional)

    Preheat the oven to 355°F. Generously butter an 8-inch round cake pan and line it with parchment paper.

    In a large mixing bowl, whisk the eggs and granulated sugar until the mixture is pale and foamy (3-4 minutes).

    Gently pour in the lukewarm melted butter while continuing to whisk until well incorporated.

    Sift the flour and baking powder together, then add to the mixture in two batches, folding gently with a spatula.

    Fold in the pistachio paste until the batter is completely smooth.

    Pour the batter into the prepared pan and smooth the surface.
