🛒 Ingredients

6 servings

6
  • 1 can sweetened condensed milk (14 oz / 397 g)
  • 1⅔ cups (400 ml) unsweetened passion fruit juice
  • 1 cup (200 ml) heavy cream (30 % fat)
  • 1 fresh passion fruit, for topping
  • 2 gelatin sheets (optional, for a firmer set)

Directions

  1. 1

Add the condensed milk, passion fruit juice and heavy cream to a blender. Blend for 2 minutes on medium speed until completely smooth and slightly frothy.

  2. 2

For a firmer set, soak the gelatin sheets in a bowl of cold water, squeeze them out, then melt for 15 seconds in the microwave. Stir into the mixture and blend for 10 more seconds.

  3. 3

Divide the mousse between serving glasses or pour into a lightly greased loaf tin. Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight.

  4. 4

Just before serving, scoop out the pulp of the fresh passion fruit and spoon it over each portion, seeds and all, for a little crunch.

💡 Chef's Tip

Look for 100 % pure passion fruit juice with no added sugar — its acidity is what balances the sweet condensed milk. To unmould cleanly, dip the tin in hot water for 5 seconds before flipping it out.
