🛒 Ingredients

20 servings

20
  • ¾ cup (200 ml) heavy cream
  • 1½ tablespoons unsalted butter
  • ½ cup (120 ml) whole milk
  • 4 tablespoons sweetened cocoa powder
  • Pinch of vanilla powder (optional)

Directions

  1. 1

In a heavy-bottomed saucepan, combine the heavy cream, milk, and butter cut into small cubes.

  2. 2

Sift in the cocoa powder and whisk until smooth with no lumps before placing over heat.

  3. 3

Heat over medium flame, stirring continuously with a whisk or silicone spatula.

  4. 4

Once the mixture begins to simmer and thickens slightly (about 5–8 minutes), remove from heat.

  5. 5

Allow to cool for 5–10 minutes before pouring over your dessert — it will thicken further as it cools.

💡 Chef's Tip

For a deeper flavour, swap the cocoa powder for melted 70% dark chocolate. Pour while still warm over a cold cake for a perfectly glossy, even finish.
