Directions
- 1
In a saucepan, combine condensed milk, cornstarch, and egg yolk. Whisk until smooth.
- 2
Cook over medium heat, stirring constantly, until the mixture thickens into a soft, pourable custard. Remove from heat and let it cool slightly.
- 3
Pour cold milk into a shallow dish. Dip each cookie briefly — just a few seconds — so it softens without falling apart.
- 4
Arrange a tight, even layer of soaked cookies at the bottom of a rectangular dish.
- 5
Spread a generous layer of custard over the cookies. Continue layering — cookies, custard, cookies, custard — until all ingredients are used.
- 6
Mix the cream and desiccated coconut together in a bowl, then spread evenly over the top layer.
- 7
Cover with plastic wrap and refrigerate for at least 1 hour before serving well chilled.
💡 Chef's Tip
For a more intense tropical flavor, use coconut milk instead of regular milk to soak the cookies. Toasting the coconut in a dry pan before mixing it with the cream adds a lovely nutty depth.
