Pear Tarte Tatin
A classic French dessert featuring caramelized pears encased in crispy puff pastry. Elegant and irresistible.

- 8 pears
- 1/2 cup granulated sugar
- 3.5 oz butter
- 2 star anise
- 3 cardamom pods
- 1 cinnamon stick
- 2 tbsp brandy
- 17.6 oz puff pastry

Core the pears, carefully peel them, and cut them in half. They can be prepared a day in advance and stored uncovered in the refrigerator to dry out.

Pour the sugar, butter, star anise, cardamom, and cinnamon into an 8-inch oven-safe skillet. Place over high heat until boiling, shaking and stirring until caramelized.

Arrange the pears in the skillet and cook for 10-12 minutes, shaking occasionally. Pour in the brandy, allow it to flame, then set the pears aside.

Preheat the oven to 392°F (356°F convection). Roll out the pastry thinly and cut a circle using a plate slightly larger than the skillet. Thin the edges.

Arrange the cooled pears cut-side up in a floral pattern. Place the cinnamon stick in the center and scatter the cardamom pods around.
💡 Chef's Tip
Caramelize the pears well for optimal flavor. Brandy can be replaced with cognac or omitted for an alcohol-free version.
