🛒 Ingredients

8 servings

8
  • 1 beef trotter cut into thick rounds
  • 300 g dried white beans (navy or cannellini)
  • 2 onions, roughly chopped
  • 1 red bell pepper, diced
  • 4 ripe tomatoes, quartered
  • 4 garlic cloves, minced
  • Fresh cilantro or flat-leaf parsley
  • 2 tbsp tomato paste
  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar
  • Juice of 2 lemons
  • Salt and black pepper
  • 1 tsp smoked paprika
  • Dried thyme and bay leaf

Directions

  1. 1

Rinse the beef trotter rounds thoroughly under cold water. Rub each piece with cut lemons and soak in cold lemon water for 20 minutes, then rinse well to remove any excess acidity.

  2. 2

In a large bowl, combine the trotter pieces with salt, pepper, paprika, vinegar, onions, bell pepper, tomatoes, garlic and herbs. Mix well, cover and refrigerate overnight to marinate.

  3. 3

The next day, heat olive oil in a pressure cooker over high heat. Add the marinated trotter with all aromatics and sauté for 5 minutes until lightly browned.

  4. 4

Stir in the tomato paste, then add cold water to cover by about 2 cm above the meat. Seal the pressure cooker, bring to pressure, reduce heat and cook for 40 minutes.

  5. 5

Let the pressure drop naturally without forcing the lid. Meanwhile, soak the white beans in boiling water for 20 minutes, then drain.

  6. 6

Add the drained beans to the pot, adjust seasoning and top up with water if needed to cover everything. Reseal, bring back to pressure, reduce heat and cook for another 15 minutes. Allow pressure to release before opening. Serve hot.

💡 Chef's Tip

This dish tastes even better reheated the next day. Serve with white rice or crusty bread to soak up the rich, flavorful broth.
