🛒 Ingredients

1 servings

1
  • 4 tablespoons popcorn kernels
  • 4 tablespoons granulated sugar
  • 4 tablespoons water
  • 3 tablespoons neutral oil (sunflower or vegetable)

Directions

  1. 1

Combine the oil, sugar, and water in a large heavy-bottomed saucepan. Stir over medium heat until the sugar dissolves and a light, even syrup forms.

  2. 2

Add the popcorn kernels and stir to coat them evenly in the warm syrup.

  3. 3

Cover the pan and cook over medium-high heat. Shake the pan in circular motions every 20–30 seconds to keep the kernels coated as they pop.

  4. 4

Remove from heat when popping slows to about one pop every 2 seconds. Pour immediately onto a parchment-lined baking sheet and allow to cool completely before serving.

💡 Chef's Tip

Keep the lid on throughout cooking to avoid hot caramel splatters. For a richer, deeper caramel flavour, let the syrup turn a darker amber before adding the kernels.
