This is comfort in a bowl, ready in five minutes and filling the kitchen with coconut and cinnamon. Oat bran brings the fibre and that lovely creamy body, while coconut wraps it all in a gentle tropical sweetness — no added sugar in sight. A dream for busy mornings and low-carb eaters alike.

🛒 Ingredients

2 servings

2
  • 3 heaped tbsp oat bran
  • 1 tbsp coconut flour
  • 100 ml water
  • 100 ml coconut milk
  • 1 to 2 dessertspoons culinary sweetener
  • 1 dessertspoon coconut oil (optional)
  • cinnamon and clove to taste

Directions

  1. 1

Combine the water and oat bran in a saucepan and stir to blend.

  2. 2

Warm over low heat, stirring constantly so no lumps form.

  3. 3

Stir in the coconut oil, coconut milk, clove and sweetener, mixing until completely smooth.

  4. 4

Keep stirring until the mixture just starts to simmer.

  5. 5

Once it boils, stay with it and keep stirring until it thickens and pulls away from the sides and bottom of the pan.

  6. 6

Remove from the heat and divide between two bowls.

  7. 7

Dust with cinnamon to taste and serve warm.

💡 Chef's Tip

Oat bran thickens fast once it heats up, so stay at the stove and keep the spoon moving — that's what gives you a silky porridge. Taste before serving and adjust the sweetener, and skip the coconut oil if you like: it will still be good, just a touch less rich.
