- Small bunch fresh parsley
- 1 jalapeño pepper
- 2 green onions, chopped
- 1/2 clove garlic
- 1/2 tsp granulated sugar

Rub the garlic clove over the beef fillets. Place them in a freezer bag, add the olive oil, vinegar, and parsley stems. Mix well and use a rolling pin to lightly tenderize the steaks. Let marinate for 1 to 2 hours.

Prepare the sauce: blend all ingredients (jalapeño, green onions, garlic, basil, parsley, sugar) with 1 tbsp of water until smooth. This sauce can be stored in the refrigerator in an airtight jar for one week.

Heat a griddle or skillet over high heat. Remove the garlic and parsley stems from the steaks. Season generously with salt and pepper. Cook the steaks for 2 minutes on each side. Let rest for a few minutes. Place the ciabatta halves on the plate, toasted side down, to absorb the juices.
