🛒 Ingredients

6 servings

6
  • 1 whole chicken, cut into serving pieces
  • 1 packet of poultry seasoning
  • Dried oregano, to taste
  • Fresh chopped parsley, to taste
  • 1 large onion, grated
  • 3–4 garlic cloves, minced
  • 1 tablespoon mayonnaise
  • 1 tablespoon softened butter
  • ½ can (about 6 fl oz) lager beer

Directions

  1. 1

Preheat the oven to 400°F (200°C). Arrange the chicken pieces in a single layer in a large baking dish.

  2. 2

In a bowl, combine the poultry seasoning, oregano, parsley, grated onion, garlic, mayonnaise, and softened butter. Mix into a smooth, creamy paste.

  3. 3

Pour in the beer and stir well, then coat each chicken piece generously with the marinade.

  4. 4

Cover the dish tightly with aluminum foil and bake for 30 minutes, turning the pieces once halfway through.

  5. 5

Remove the foil and discard most of the cooking liquid, leaving just a thin layer to prevent sticking.

  6. 6

Return to the oven uncovered for 15 minutes until deeply golden and cooked through. Serve hot.

💡 Chef's Tip

Use a light lager for a mild flavour or an amber ale for more depth. The mayonnaise is the secret to remarkably moist, tender meat.
