Directions
- 1
Separate drumsticks from thighs and remove any thick skin. Rub all pieces with lemon juice, season with salt and your preferred spices. Let marinate for 10 minutes.
- 2
Set up two shallow bowls — one with mayonnaise, one with the dry onion soup mix. Coat each chicken piece thoroughly in mayonnaise, then dredge in the onion soup powder.
- 3
Arrange the chicken in a microwave-safe glass dish, placing drumsticks bone-side down in the centre and thighs around the edges.
- 4
Toss the potato halves in the remaining mayonnaise and onion mix, then tuck them into the gaps around the chicken.
- 5
Microwave on full power for 30 minutes. At the 20-minute mark, carefully flip each piece and move any centre potatoes toward the edges to ensure even cooking.
- 6
Rest for 3 minutes before serving. For a golden finish, slide the dish under a conventional oven grill for 5 minutes at the end.
💡 Chef's Tip
For maximum flavour, coat the chicken the night before and refrigerate overnight — the mayonnaise keeps the meat incredibly moist. If your microwave doesn't have a turntable, rotate the dish manually halfway through cooking.
