Directions
- 1
Season the chicken pieces with salt, pepper, paprika, minced garlic, and fresh herbs. Let marinate for 15 minutes at room temperature.
- 2
Heat the oil over high heat in a large skillet or Dutch oven. Sear the chicken pieces on all sides until deep golden brown, about 8–10 minutes total.
- 3
Once the chicken is well browned, add the sliced onions and saffron. Stir to coat and cook for 3 minutes until the onions begin to soften.
- 4
Pour in the warm water, scraping up any browned bits from the bottom of the pan. Cover and simmer over medium heat until the liquid has fully evaporated.
- 5
When the chicken starts to sizzle again, it's ready. Serve immediately with steamed white rice or crusty bread.
💡 Chef's Tip
Add a pinch of turmeric alongside the saffron for a richer golden color. If using saffron powder instead of threads, use just half the amount for the same intensity.
