🛒 Ingredients

10 servings

10
  • 1 whole chicken, cut into pieces
  • 4 medium onions, sliced into half-moons
  • 3 cloves garlic, crushed
  • 150 ml chicken broth or water
  • Salt and freshly ground black pepper, to taste
  • 1 tsp smoked paprika
  • 1 tsp dried herbs (thyme, rosemary, or herbes de Provence)
  • 10 tbsp olive oil

Directions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced onions and cook, stirring occasionally, for 15–20 minutes until deeply golden and caramelized — don't rush this step.

  2. 2

Add the chicken pieces and brown them on all sides, about 8–10 minutes, until nicely colored.

  3. 3

Add the crushed garlic, paprika, dried herbs, salt, and pepper. Stir well to coat the chicken evenly.

  4. 4

Pour in the broth or water until it reaches halfway up the chicken pieces — do not submerge them fully, to keep the sauce concentrated and flavorful.

  5. 5

Cover the pot and simmer over low heat for about 40 minutes, until the chicken is tender and comes away from the bone easily.

  6. 6

Taste, adjust seasoning if needed, and serve hot with steamed rice, mashed potatoes, or crusty bread.

💡 Chef's Tip

The key to this dish is patience with the onions — cook them until deeply golden, almost catching on the edges. That caramelization is where all the flavor lives.
