🛒 Ingredients

8 servings

8
  • 1 kg (2.2 lbs) chicken thighs and drumsticks
  • 3 large yellow onions, sliced into rings
  • 3 tablespoons granulated sugar
  • 1 cup (200 ml) water
  • Salt, black pepper, and your favorite spices to taste
  • 2 garlic cloves, minced (optional)

Directions

  1. 1

Season the chicken pieces generously with salt, pepper, and spices of your choice. Let them marinate in the fridge for at least 1 hour so the flavors develop.

  2. 2

Heat a large heavy-bottomed pot or Dutch oven over high heat with no oil. Once very hot, sprinkle the sugar evenly across the bottom.

  3. 3

Let the sugar melt undisturbed until it turns into a deep amber caramel, similar in color to dark pudding syrup. Watch closely to avoid burning.

  4. 4

Add the onion rings to the caramel, stirring quickly to coat them. Cook for about 4 minutes, stirring occasionally, until softened and glazed.

  5. 5

Nestle the chicken pieces into the pot, skin side down. Cover and cook over medium heat for 5 minutes to sear.

  6. 6

Pour in the water, cover again, and simmer over low heat for 35–40 minutes, turning the chicken halfway through, until fully cooked and the sauce has thickened into a glossy glaze.

💡 Chef's Tip

Use a heavy-bottomed pan for even caramelization. If the sauce gets too thick, add a splash of hot water. Serve over steamed white rice or mashed potatoes to soak up all that gorgeous caramel sauce.
