Directions
- 1
Season the chicken pieces generously with salt, Calabrian chili, ground coriander, and bay leaf powder. Let rest for 10 minutes so the flavors can fully penetrate the meat.
- 2
Heat the pressure cooker over medium-high heat with no oil. Add the seasoned chicken and brown on all sides for about 5 minutes. Stir in the annatto and toss well to coat every piece evenly in that beautiful golden color.
- 3
Add the chicken and smoked bacon bouillon cubes, then pour in the 600 ml of water — just enough to cover the chicken. Seal the pressure cooker lid securely.
- 4
Cook under pressure over medium heat for 30 minutes. To check doneness, pierce a piece with a fork — if it slides in easily and the meat shreds without resistance, the chicken is perfectly cooked.
- 5
Serve hot alongside white rice and beans, or pair with roasted seasonal vegetables of your choice.
💡 Chef's Tip
For deeper flavor, season the chicken the night before and let it marinate in the fridge overnight. If you can't find annatto, sweet paprika is a great substitute — the color will differ slightly, but the taste will still be wonderful.
