🛒 Ingredients

12 servings

12
  • 1 cup (120 g) all-purpose flour, sifted
  • 2 whole eggs
  • 1 cup (200 g) sugar for the batter
  • 1 cup (200 g) sugar for the caramel
  • 2 cups (500 ml) whole milk
  • Margarine or butter to grease the pan

Directions

  1. 1

Preheat the oven to 350 °F (180 °C). Place a large roasting pan in the oven and fill it halfway with hot water to create the water bath.

  2. 2

Make the caramel: spread 1 cup of sugar evenly across a dry saucepan and heat over medium heat without stirring until it turns deep amber. Immediately pour into the greased baking pan and tilt to coat the base evenly. Set aside to harden.

  3. 3

In a large bowl, whisk the eggs with the remaining 1 cup of sugar until the mixture turns pale and fluffy.

  4. 4

Gradually sift in the flour while stirring continuously, then pour in the milk in a thin stream, whisking until completely smooth and lump-free.

  5. 5

Gently pour the batter over the hardened caramel. Set the pan inside the water bath and bake for 50–60 minutes, or until a skewer inserted in the centre comes out clean.

  6. 6

Cool to room temperature, then refrigerate for at least 2 hours. Run a knife around the edge, place a serving plate on top and flip to unmould. Serve cold.

💡 Chef's Tip

For a perfectly smooth batter, let the milk come to room temperature before adding it — this prevents the eggs from curdling and ensures an even, lump-free texture.
