🛒 Ingredients

4 servings

4
  • 2 tablespoons oil
  • 1 kg (2.2 lbs) oxtail, cut into pieces
  • 1 large onion, finely chopped
  • 5 large garlic cloves, crushed
  • 1 large tomato, diced
  • 1 cup fresh cilantro, chopped
  • 1 handful flat-leaf parsley, chopped
  • 1/2 large red bell pepper, diced
  • Salt to taste
  • Ground cumin to taste
  • White pepper or pepper of your choice
  • Sweet paprika (optional)
  • 1.5 liters (6 cups) boiling water

Directions

  1. 1

Soak the oxtail pieces in salted water for 30 minutes, then drain well.

  2. 2

Trim away any excess visible fat from the meat.

  3. 3

Heat oil in a large pressure cooker over high heat. Add crushed garlic and half the parsley, sauté until lightly golden.

  4. 4

Add the oxtail pieces and sear over high heat, turning regularly, until well browned on all sides and no blood remains.

  5. 5

Once all the liquid has evaporated, add the chopped onion and cook until golden and softened.

  6. 6

Add the diced tomato and red bell pepper, cook for another 2–3 minutes.

  7. 7

Season with salt, cumin, white pepper and half the cilantro.

  8. 8

Pour in 1.5 liters of boiling water, cover and cook under pressure for at least 1 hour.

  9. 9

Check the meat — it should be very tender and falling off the bone.

  10. 10

Uncover and let the sauce thicken over medium heat. Off the heat, stir in the remaining fresh cilantro.

💡 Chef's Tip

For an even richer flavor, make this a day ahead — it tastes even better reheated. Serve with white rice or creamy mashed potatoes to soak up the delicious sauce.
