Raspberry Jam Roulé
A comforting British classic: a soft dough generously rolled with raspberry jam, then steamed to a melt-in-your-mouth texture. Serve warm with custard for a decadent and traditional dessert.

- 1.75 cups all-purpose flour with leavening
- 1 vanilla bean
- 3.5 oz suet or vegetable shortening
- 0.6 cups milk
- 3.5 oz raspberry jam
- Custard for serving

Preheat the oven to 350°F (325°F convection). Fill a roasting pan two-thirds full with boiling water and place it on the bottom rack of the oven.

Mix the butter, flour, and vanilla bean seeds until the texture resembles coarse crumbs. Add the suet and milk to form a sticky dough.

On a floured surface, roll out the dough into a square approximately 10 x 10 inches. Spread the jam, leaving a 1-inch border on one side.

Roll up the dough tightly from the side opposite the border. Seal the ends by pinching.

Wrap the roulé in parchment paper and then aluminum foil, not too tightly. Place it on the rack above the water bath.

Bake for 1 hour. Let rest for 5 minutes before unwrapping and serving in thick slices with custard.
💡 Chef's Tip
Prepare the water bath just before baking to keep the water hot. Don't wrap too tightly: the pudding will expand. Suet is traditional but can be replaced with vegetable shortening.
