🛒 Ingredients

2 servings

2
  • 1 cup whole grain brown rice, rinsed and drained
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups hot water or vegetable broth
  • Salt and freshly ground black pepper, to taste
  • 1 bay leaf (optional)

Directions

  1. 1

Heat the olive oil in the pressure cooker over medium heat. Sauté the diced onion for 2–3 minutes until softened and translucent. Add the minced garlic and cook for one more minute, stirring constantly.

  2. 2

Add the rinsed brown rice and stir to coat every grain with the aromatics. Season with salt and pepper. Tuck in the bay leaf if using.

  3. 3

Pour in the hot water or broth, seal the lid, and bring to full pressure over high heat. Once the valve hisses, lower the heat to minimum and cook for 10 minutes.

  4. 4

Turn off the heat and allow the pressure to release naturally. Open carefully, discard the bay leaf, fluff the rice with a fork and serve warm.

💡 Chef's Tip

Swap water for vegetable broth for a richer depth of flavor. A pinch of turmeric added with the rice gives a warm golden color and extra nutrition.
