Directions
- 1
Place each chicken fillet between two sheets of plastic wrap and pound gently with a meat mallet until about ¼ inch (5 mm) thick.
- 2
Combine garlic, chives, lemon juice, paprika, salt, and pepper. Rub the mixture all over the fillets and marinate in the refrigerator for at least 3 hours.
- 3
Lay half a slice of ham and half a slice of mozzarella on each fillet.
- 4
Roll each fillet tightly starting from the shorter end, and secure with toothpicks.
- 5
Dip each roll in beaten egg, then coat thoroughly in breadcrumbs. Repeat once more for an extra-crispy crust.
- 6
Shake off excess breadcrumbs.
- 7
Heat oil to 350 °F (175 °C) and fry the rolls for 6–8 minutes, turning occasionally, until golden brown all over.
- 8
Drain on paper towels, remove toothpicks, and serve immediately with a green salad or roasted vegetables.
💡 Chef's Tip
For a lighter version, brush the rolls with a little oil and bake at 400 °F (200 °C) for 20 minutes. Try swapping the filling with cream cheese and spinach for a different twist.
