  • 450g potatoes
  • 2 tbsp olive oil
  • 4 eggs
  • 1 tbsp red wine vinegar
  • 2 tbsp capers
  • 50g sunflower oil
  • ½ red onion
  • 100g spinach
  • 400g fresh or canned tuna

    Preheat oven to 200°C (180°C fan). Toss potatoes with 2 tsp oil and season. Roast 20 minutes, stirring halfway, until crispy and golden.

    Lower eggs into boiling water and simmer 8-10 minutes. Transfer to cold water, peel and halve.

    In a large bowl, whisk remaining oil, red wine vinegar and capers. Add red onion and spinach. Gently fold in tuna and roasted potatoes. Season to taste.

    Top with halved eggs and serve immediately.

💡 Chef's Tip

Use freshly grilled tuna for more flavor. Prepare ingredients in advance and assemble just before serving to keep it fresh. A dry white wine pairs perfectly with this salad.
