🛒 Ingredients

4 servings

4
  • 4 tablespoons cocoa powder (+ 3 more added later)
  • 6 tablespoons granulated sugar
  • 4 tablespoons whole milk
  • 200 g (7 oz) heavy cream

Directions

  1. 1

In a saucepan over low heat, whisk together cocoa powder (4 tbsp), 4 tbsp sugar, and the milk until a smooth, lump-free paste forms.

  2. 2

Stir in 100 g of heavy cream and cook gently for 2 minutes, stirring continuously.

  3. 3

Add the remaining 3 tablespoons of cocoa and 2 tablespoons of sugar, mixing vigorously until fully incorporated.

  4. 4

Pour in the remaining 100 g of cream and keep stirring until the sauce just begins to simmer — do not let it boil.

  5. 5

Remove from heat and allow to rest for 2 minutes so the sauce thickens slightly.

  6. 6

Pour generously over your cake while still warm and serve immediately.

💡 Chef's Tip

Use 100% unsweetened cocoa for a deeper chocolate flavor. A small pinch of sea salt at the end beautifully enhances the chocolate notes. Leftovers keep for 3 days in the fridge — gently reheat in a double boiler.
